Granny's Water Biscuits


Biscuits are an important part of a Southern meal. It doesn't matter if it's breakfast, lunch (dinner), or dinner (supper), you can almost always bet biscuits will be served along side everything else.

Simple, and humble, though they may be a good biscuit is the pride of many a Southern cook.

They can be served savory with gravy, cheese, sausage, with soups or stews, etc. They can also be served sweet with jam or jelly, honey and butter, or topped with fresh fruit and ice cream.

My granny made the best biscuits. They were dense and flavorful. I loved the way the felt in my mouth when I took a bite, and the taste was like nothing else. They were delicious hot out of the oven, but even after they'd sat on the table all morning or afternoon (on the odd day that there would be any left) I loved to grab one and snack on it because they would taste just as good cooled (if not better) as they did piping hot.

She called hers 'water biscuits', but I've also heard this type referred to as drop or spoon biscuits. This is because you spoon and drop the biscuits on to the pan instead of rolling and cutting.

I've always preferred my granny's way of doing biscuits; for one thing they are easier, but there is also something so homey about the way they turn out.

I'm going to include to versions of this recipe; one is the way I think my granny made them (I can't be 100% certain as she didn't write her recipes down, and no one I've spoken to actually made them with her). The other way is a slightly lighter (or fluffier) version (it includes just the tiniest bit of baking powder). I suggest you give them both a try!

Granny's Water Biscuits

1 - 1 1/2 cups flour

1 tsp salt (basically a palm full)

3/4 - 1 cup water

1/2 cup butter (cut into cubes)

In a bowl mix flour and salt, rub/cut in the butter until it is roughly the size of peas, stir in water till you have a slightly sticky dough. Spoon onto a well greased baking sheet.

Bake for 15 minutes (or until golden brown) @ 200 Celsius (400 Fahrenheit)

Makes about 9 biscuits

Variation

1-1 1/2 flour

1 1/2 tsp baking powder

1 tsp salt
